When Joseph Palladino was a child living in New Hampshire, he had the run of his Italian immigrant grandparents’ vast property where vegetable gardens and grapevines flourished. That’s where he grew to appreciate really good food. His grandparents came to this country from Tuscany, bringing with them their knowledge and love of true Italian cooking. Today, Palladino is excited about bringing the “true” Italian experience to guests at Vinito

Palladino is a well known fixture in the central Florida restaurant industry. He began his management career at Church Street Station in downtown Orlando in 1995. Since then, Joe has worked as general manager at the acclaimed L’Originale Alfredo di Roma Ristorante in the World Showcase at Epcot in the Walt Disney World Resort, manger at Café d’Antonio in Celebration, Fla., general manager at Antonio’s Café & Wine Shop in Orlando and eventually proprietor of his own Palladino’s Ristorante in Apopka, Fla.

One auspicious day, Vinito partner Rashid Khatib dined at Palladino’s. Khatib was so impressed with Palladino that he made the restaurateur an offer he couldn’t refuse: “Come to Vinito and give our guests the real Italian experience.”

The idea was so compelling that Palladino shuttered his Apopka restaurant and made the move to Vinito in August 2009, where he feels right at home working with Italian chef Raffaele Marsilio.
